A properly soft Hass avocado is easy to identify. It should be slightly compressible, but not too much. The color of the rind should be dark brown to black, and when you remove the stem, there should be green flesh underneath.

Working with avocado:
Cutting: To cut an avocado, proceed as follows: place the avocado in the palm of your hand, insert a knife into the core and carefully turn it over. Then cut the avocado in half, remove the core - lightly stick a knife into it and turn it slightly to release the pit, remove the pulp with a spoon or peel off the skin.
Recipes:
Guacamole: Mix mashed avocado with crushed garlic, lime juice, chopped onion, tomatoes and salt. Serve with chips or as a dip for vegetables.
