Dragon Fruit Chili Sauce
The combination of the sweet taste of dragon fruit, exotic spices, and quality alcohol has resulted in a very spicy and flavorful sauce inspired by Southeast Asia.
The sauce is based on pitaya, also known as dragon fruit. Its sweet tones are enhanced by honey and balanced with rice wine, fresh lime juice, and rice vinegar. The classic trio typical of Southeast Asia - garlic, ginger, and pepper - adds spiciness. The pepper used is not just any pepper but the intoxicatingly fragrant Cambodian red long pepper. To ensure the sauce is suitably spicy, it includes a generous dose of yellow Trinidad Scorpion Moruga peppers.
Thanks to its balanced sweet-spicy flavor, the sauce complements grilled vegetables and meats excellently. It pairs well with chicken, fish, or seafood, whether as a marinade or a final seasoning. It also goes wonderfully with fried spring rolls, tempura vegetables, and other Asian dishes.
